Pork loin 250 g, thin slices
Bean sprouts 150 g
Leafy greens 100 g
Dried chili 8-10 pieces
Sichuan peppercorn 1 tsp

Sauce ratio

Doubanjiang 1.5 tbsp
Light soy sauce 1 tbsp
Stock or water 500 ml
Chili powder 1 tbsp

Cooking steps

Marinate the pork

Mix slices with salt, soy sauce, starch, egg white, and a little oil. Rest 10 minutes.

Make the broth

Fry doubanjiang until red, add stock, season, then cook vegetables and move them to the serving bowl.

Cook slices and finish

Slide pork into the barely boiling broth. Pour over vegetables, top with chili and peppercorn, then splash with hot oil.
